recipes that is truly part of
my Mexican heritage, being
that I was born and raised in
Mexico City until I was 24.
This is one of the traditions in our culture,
and I've continued to share it with my
children."

Sopa de Arroz (Rice Soup)
1 cup long-grain rice
1/4 cup cooking oil
1/4 cup pureed tomatoes
2 cups chicken broth (very
hot)
salt (to taste)
Place pan with cooking oil
over medium-high heat. As oil becomes hot,
add rice, sauteeing until rice begins to turn
a light brown. Turn down heat half a notch
(to low-medium) and continue to brown, being
careful not to over-cook. Add pureed
tomatoes, sauteeing a few seconds, and add
hot chicken broth. Salt to taste. Slightly
increase heat (to medium setting). Cook just
until broth begins to boil, then reduce heat.
Cover and let simmer for approximately 20
minutes or until completely dry. Remove from
heat and fluff with fork. It can be served
with a variety of dishes, and is quite
appropriate for special occasions. It can be
prepared in different ways by adding shrimp,
chicken or fish. Serves 5-6.
